Located on the west end of Pearl Street in Boulder, pepper opened in the summer of 2019 and provides a relaxed and casual atmosphere, ideal for families, get-togethers, private dining, and large parties. Owned by renowned chef and farm-to-table trailblazer, Bradford Heap, pepper is SALT‘s mischievous kid brother focusing on providing guests with sustainable and humanely-raised food with flavors that showcase the best of what the season has to offer.
Chef Heap has always held an importance in health and wellness. His family was a driving force in his quest to source and serve food that is both enjoyable and good for the body. Pepper’s menu brings these standards to its guests, serving the season’s best ingredients in innovative and delightful ways.
Like SALT, pepper takes pride in responsibly sourcing food from purveyors who support sustainable practices. Chef Heap uses influence from his time in Europe to inspire pepper’s menu. He procures and prepares the freshest possible ingredients of the region to develop new American cuisine that showcases the honest flavor of the ingredients. He believes that food tastes best when it travels the shortest distance.
The summer starters and snacks include traditional favorites like a BYO Hipster Toast with avocado and sunnyside egg; and Spicy Buffalo Cauliflower. Sandwiches and burgers include the Famous Wagyu Sliders on a homemade bun and Grilled Four Cheese with Brad’s Famous Tomato Soup.
Lively house specials feature Seafood Green Curry, Mary’s Brick Chicken, and Taste of Spring with pea tendrils, charred cauliflower, spinach, bok choy, and lemon panisse.
Our classic raw bar features neighborhood favorites like oysters, playful seafood platters with Alaskan king crab, and salmon tartare with taro chips.
Chef Heap works to keep pepper’s beverage program fresh, witty, and innovative. The wine list features a large selection of biodynamic and sustainable wines.
The cocktail selection also includes a variety of house-made creations including Monks in the Mosh Pit, Among the Wildflowers, and Smoke & Spice. Enjoy local beers from Upslope, Avery, and 4 Noses.
Pepper strives to create a fun and relaxed atmosphere while adding elements of creativity to the surroundings. The décor also stays true to the green theme with 95% of the restaurant’s décor being recycled or reused. This includes the tables, chairs, bar and barstools. Even the ceiling’s beams were salvaged from a dairy farm in Wisconsin. Pepper offers private and semi-private event options. Guests may customize their menu and cocktail service.
